FREEKEH LEVANTINE TABBOULEH


INGREDIENTS

  • 2 cups cooked see direction below and GENERAL FREEKEH COOKING INSTRUCTION

  • 2 ½ cups water or vegetable broth

  • 2 ½ cups flat-leaf parsley chopped

  • ½ cup fresh mint, chopped

  • ½ cup fresh spring onion, chopped

  • Sweet Cherry tomatoes, diced

  • ½ cup cucumber, diced

  • 4-5 T fresh lemon juice

  • 2 garlic cloves, diced

  • Pinch of Cumin

  • Salt to taste

  • Extra virgin olive oil

INSTRUCTIONS


  1. Pour water or broth and the freekeh in a saucepan and bring to a boil, cooking for 1 minute. Reduce heat to low. Cover and simmer for about 20-25 minutes until the freekeh is tender. Once cooked, remove from heat and set aside to cool.

  2. Dice the tomatoes, cucumbers, and garlic. Add all ingredients in a large bowl and mix well. Taste and adjust seasoning e.g. cumin, salt, lemon and olive oil if needed.
