HOW TO BUY THE BEST TAHINI

The worst cooking and baking experience with tahini, is that you need to vigorously stir the tahini, trying in vain to get the oil and the chalky paste to coalesce, Your hand may slip from the oil, splashing tahini all over the kitchen wall and your clothes.


If you’re purchasing a jar to make a dip, hummus, or another cocking and baking project, seek out a brand that requires minimal or no stirring—like Al Arz tahini.


Fresh, good-quality tahini will be much more homogenous than an older, low-quality one, says celebrity chefs and food critics. When I read “Oil separation is natural, stir well to re-blend” and if I see 2-3 cm of oil floating on top, this is a strong indication of low quality tahini. “ A little of oil is inevitably going to slightly rise, and you shouldn’t necessarily be put off by separated tahini. For baking, homogeneity is key. “If you’re measuring out half a cup or decilitre and it’s all oil or all chalk, you’ll not get the desired result,”. “You either need to buy tahini that is nice and smooth or stir the heck out of it beforehand.”


In addition to texture, flavor is another indicator of tahini’s quality and freshness. Tahini has delicious, nutty flavor with a slight bitterness that most other nut or seed butters don’t. It’s quite savory. You want it to taste earthy, nutty, and rich.” But if that bitterness tips over into astringency—that mouth-drying sensation that you get from a tannic red wine—that is not the tahini for you.
