ROASTED CAULIFLOWER WITH Al ARZ TAHINI AND LEMON GARLIC SAUCE
Healthy, easy to make, it’s vegan and gluten-free
INGREDIENTS
2 heads cauliflower, broken into florets
2 dl Al Arz Tahini
3 cloves of garlic or taste finely diced
1 dl extra-virgin olive oil
½ dl of one fresh lemon juice
1 large white Onion or 3 shallots
Salt to taste
Freshly ground pepper to taste
Flaky sea salt
1 dl finely chopped flat-leaf parsley
1 DL of fresh mint leave
INSTRUCTIONS
Preheat oven 250°C
Break the cauliflower into florets or slice the cauliflower into 2 cm thick slabs or “veggie steaks” and place in baking tray, brush and drizzle olive oil so, sprinkle some flaky sea salt and grind some pepper to taste.
Roast cauliflower for 20-35 minutes until they are slightly tanned, turn once mid time.
Chop onion 4-6 mm slices or Shallots to 4 parts each and drizzle some olive oil and fry on medium heat until translucent and light brown.
Puree the garlic cloves with ¼ teaspoon salt in a mortar and pestle.
Transfer to a bowl, and whisk by hand in the Al Arz tahini, lemon juice, 2-3 tablespoons of cold water. If the mixture is to stiff add more cold water, until the sauce creamy and white and has the consistency of thick cream. Stir in the parsley. Taste, and adjust salt and lemon juice.
Pour the Tahini mix over cauliflower and add the rest of the fried onion.
Bake until it is cocked and tahini is tan 10-15 minutes.
Remove from oven, sprinkle with flaky sea salt and let cool
Sprinkle with fresh pomegranate seeds, fresh Parsley, Mint, Coriander and even fresh timian YOUR CHOICE.
Tips
Tahini mix you can add more Tahini for thickness or dilute with water.
